Live Sabah Grouper Fish ~ also called Hybrid Grouper, it is a hybrid species of grouper between Giant Grouper and Tiger Grouper cultured by University Malaysia Sabah (UMS). Grouper has become the choice for healthy eating people because it is nutritious in addition to being delicious. Four ounces of uncooked grouper has only 110 calories, 2 grams of fat (none of which is saturated) and only 55 grams of cholesterol. When you add the 23 grams of protein plus calcium and iron, grouper begins to look like the perfect food. The grouper meat is so low in fat, some basting may be necessary when grilling, broiling or baking.

Different from the usual steaming Chinese style, I used a hybrid shallow deep fried version dusted with a thin layer of flour , finished off with a classic beurre noisette sauce and a little lemon. My husband loved it –
