Frozen Egypt Cooked Dill Crayfish

Crayfish ~ a fresh water crustacean, sometimes called little lobster because it resembling small lobsters. This red crustacean was introduced to China by the Japanese. Set free at the end of the second world war, they flourished and have become a culinary favorite and a true delicacy in China.  Crayfish live in a range of habitats including clean, flowing waters (streams, rivers) and standing waters (ponds, lakes, marshes, swamps). They are found in almost any wetland, including drainage ditches.

Our crayfish are cooked in water with dill, salt and sugar in Egypt. There are many ways to cook the crayfish.  One of the most common ways to cook crayfish in China is stir-frying and then seasoning it with powder that comes in flavors as diverse as garlic, salted egg yolk, and mala, the characteristic numbing spice of Sichuan Province.  It is sweet, and has a firm texture. It’s has a wonderful taste that stand something in between shrimp and lobster.
